Preparation Steps
  1. Preheat your grill to medium heat, about 350°F to 400°F.
  2. Slice the peaches in half and remove the pits. Place the peach halves cut-side down on the grates. Grill for about 3-4 minutes, then flip and grill for an additional 2-3 minutes.
  3. Meanwhile, preheat your oven to 400°F. Spread the pancetta evenly on a baking sheet and bake for approximately 10 minutes until crispy.
  4. In a mixing bowl, whisk together honey, white wine vinegar, and light brown sugar. Gradually drizzle in the olive oil while whisking to emulsify.
