  1. Prepare the Medjool dates by pitting and placing them in a food processor. Pulse until you get a smooth, sticky paste.
  2. Add gluten-free rolled oats, cocoa powder, peanut butter, and peanuts to the food processor. Blend until a thick dough forms.
  3. Shape the mixture into approximately 16 balls, about 1 inch in diameter.
  4. Press two candy eyeballs into the center of each ball while they are still sticky.
  5. Cut licorice bars into strips and insert them into the energy balls to create decorations.
  6. Chill the decorated balls on a parchment-lined tray in the refrigerator for 15 to 30 minutes.
