Ingredients
  

For the Chicken Marinade
  • 1 lb chicken thighs or chicken breasts
  • ¼ cup low-sodium soy sauce or tamari for gluten-free
  • 2 tablespoon gochujang adjust based on desired heat
  • 2 tablespoon brown sugar can substitute with honey or maple syrup
  • 1 tablespoon sesame oil or olive oil for lighter option
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated, or ground ginger as substitute
  • 1 tablespoon rice vinegar or apple cider vinegar
For the Bowl Assembly
  • 4 cups cooked rice jasmine, brown, or cauliflower
  • 1 cup cucumber sliced
  • 1 cup shredded carrots or radishes
  • 1 cup cooked edamame or chickpeas
  • 1 cup kimchi optional
  • 2 tablespoon sesame seeds for garnish
  • ¼ cup green onions chopped

Method
 

Instructions
  1. Whisk together gochujang, soy sauce, sesame oil, and brown sugar in a medium bowl until smooth.
  2. Add minced garlic, grated ginger, and rice vinegar, mixing until combined.
  3. Marinate chicken thighs in the mixture for a minimum of 30 minutes.
  4. Preheat the skillet over medium-high heat for about 2 minutes.
  5. Add a splash of neutral oil to the skillet and swirl to coat it.
  6. Cook marinated chicken for 3-4 minutes on each side until fully cooked and golden.
  7. Remove chicken and let it rest before slicing.
  8. In serving bowls, layer rice as the base, then arrange sliced chicken on top.
  9. Add cucumber, shredded carrots, and edamame around the chicken.
  10. Garnish with sesame seeds and green onions, and serve with optional kimchi.
