Preparation
- Rinse 5 cups of fresh spinach under cold water, shake off excess water, and transfer to a large bowl.
- Bring a pot of water to a rolling boil, then add spinach and blanch for 1 minute.
- Transfer spinach to an ice bath to halt cooking and maintain color.
- Drain spinach in a colander and gently squeeze to remove excess moisture.
- In a bowl, whisk together 2 tablespoons of sesame oil, 1 tablespoon soy sauce, 1 teaspoon rice vinegar, 1 minced garlic clove, and 1 teaspoon sugar.
- Add drained spinach to the dressing and toss until evenly coated.
- Transfer dressed spinach to a serving platter and sprinkle with 2 tablespoons toasted sesame seeds.
- For modern version, rinse another 5 cups spin under water and whisk together 3 tablespoons olive oil, 1 tablespoon soy sauce, juice of half a lime, and 1 teaspoon honey.
- Combine rinsed spinach with dressing, fold in 1 diced avocado and 2 chopped green onions.
