Method
 

Directions
  1. Spread the cubed bread evenly on a large cookie sheet and allow it to dry out for about an hour.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, granulated sugar, vanilla extract, cinnamon, and nutmeg until well combined.
  3. Grease a 9' x 13' baking dish and layer half of the dried bread cubes evenly on the bottom. Sprinkle half the bacon or sausage if using.
  4. Pour the prepared custard mixture over the layered bread, ensuring all pieces are submerged.
  5. Cover with plastic wrap and refrigerate for at least 4 hours or ideally overnight.
  6. Preheat oven to 350°F. Remove cover from casserole and bake for 60–70 minutes until golden brown.
  7. Let cool for a few minutes, then serve with toppings.
