Step-by-Step Instructions for Peanut Butter Chicken
  1. In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the chicken and sear until golden brown, approximately 5-6 minutes per side. Remove and set aside.
  2. In the same skillet, add the chopped onion and sauté over medium heat until translucent, about 3-4 minutes. Stir in garlic and ginger, cooking for another minute until fragrant.
  3. Lower the heat and add 1 cup of peanut butter, stirring until melted and combined; this takes about 2 minutes.
  4. Gradually pour in 1 cup of coconut milk, stirring constantly until smooth. Cook for 3-4 minutes until it bubbles lightly.
  5. Add soy sauce, brown sugar, lime juice, chili powder, and cumin. Stir well to combine; season with salt and pepper to taste.
  6. Return the chicken to the skillet, ensuring it's well coated in sauce. Reduce heat and simmer for 15-20 minutes until cooked through.
  7. Serve hot, garnished with cilantro and roasted peanuts.
