Preparation
- Dice 1 pound of fresh pineapple into small pieces and set aside.
- In a blender, combine the remaining 1 pound of pineapple, coconut milk, coconut cream, sweetened condensed milk, lime juice and zest, and coconut rum. Blend until smooth.
- Spoon diced pineapple into ice pop sleeves, then fill with blended mixture, leaving ½ inch at the top.
- Seal sleeves tightly and lay flat on a baking sheet in the freezer for at least 5 hours.
- Once frozen, remove sleeves, and serve immediately.
