  • 1 can Coconut Milk 15 ounces, adds creaminess.
  • ½ can Coconut Cream 15 ounces, enhances richness.
  • 1 can Sweetened Condensed Milk 14 ounces, contributes sweetness.
  • 2 Lime Juice and Zest Essential for bright flavor.
  • 10 ounces Coconut Rum Optional for a kick.

Method
 

Preparation
  1. Dice 1 pound of fresh pineapple into small pieces and set aside.
  2. In a blender, combine the remaining 1 pound of pineapple, coconut milk, coconut cream, sweetened condensed milk, lime juice and zest, and coconut rum. Blend until smooth.
  3. Spoon diced pineapple into ice pop sleeves, then fill with blended mixture, leaving ½ inch at the top.
  4. Seal sleeves tightly and lay flat on a baking sheet in the freezer for at least 5 hours.
  5. Once frozen, remove sleeves, and serve immediately.
