Prepare Filling
- Melt butter in a skillet over medium heat. Add cream cheese, pumpkin puree, condensed milk, and pumpkin pie spice. Stir for about 5-7 minutes until smooth.
- Reduce heat to low; mix in graham cracker crumbs and white chocolate chips for another 2-3 minutes.
- Transfer mixture to a greased sheet. Refrigerate for at least 2 hours.
Form Truffles
- Roll tablespoon-sized portions into balls.
- Coat each truffle in granulated sugar.
- Use a toothpick to create ridges and press a chocolate chip on top.
