Ingredients
  

Peanut Sauce
  • ½ cup peanut butter substitute with sunflower seed butter or tahini for peanut-free
  • 2 tablespoons soy sauce opt for low-sodium if preferred
  • 1 tablespoon brown sugar or honey use maple syrup as an alternative
  • 1 tablespoon rice wine vinegar can substitute apple cider vinegar
  • 1 clove garlic freshly minced is recommended
  • 1 teaspoon freshly grated ginger ground ginger can substitute
  • 1 teaspoon sriracha adjust quantity to taste
Wrap Filling
  • 2 cups cooked and chopped chicken rotisserie chicken works great
  • 2 cups coleslaw mix can replace with shredded cabbage and carrots
  • ½ cup grated carrot optional but recommended
  • ¼ cup chopped cilantro omit if not a fan
  • ¼ cup chopped salted peanuts can use unsalted if preferred
Wrap Base
  • 4 large tortillas use lettuce leaves for a low-carb option

Method
 

Prepare the Peanut Sauce
  1. In a medium bowl, whisk together peanut butter, soy sauce, brown sugar, rice wine vinegar, minced garlic, grated ginger, and sriracha. If too thick, thin with warm water.
Combine Filling
  1. In a large mixing bowl, combine chicken, coleslaw mix, grated carrots, cilantro, and peanuts. Drizzle half of the peanut sauce over the filling and toss together.
Warm Tortillas
  1. Warm tortillas in the microwave for about 30 seconds or in a dry skillet for 15-20 seconds on each side until soft.
Assemble Wraps
  1. Lay one tortilla flat, scoop a portion of the filling in the center, fold in the sides, and roll from the bottom up. Repeat with remaining tortillas.
