Preparation
  1. Heat the water to about 115°F, then combine it with active dry yeast and sugar in a mixing bowl, letting it sit for 5-10 minutes until frothy.
  2. In the meantime, mix the flour and salt in a stand mixer bowl. Slowly pour in the yeast mixture while mixing on low speed until the dough starts to form.
  3. Knead for about 5-7 minutes until smooth and elastic, then transfer to a greased bowl, cover, and let rise in a warm place for about 1 hour until doubled in size.
  4. While the dough is rising, preheat your oven to 450°F. Lightly grease a baking sheet with olive oil.
  5. In a small bowl, combine the olive oil, minced garlic, and red pepper flakes. Microwave this mixture for about 20 seconds until fragrant.
  6. Once the dough has risen, punch it down gently to release air and roll it out on the prepared baking sheet.
  7. Brush the entire surface with the garlic oil mixture.
  8. Sprinkle a generous layer of Parmesan cheese over the crust, followed by an ample amount of shredded mozzarella.
  9. Finish with a touch of ground black pepper and some fresh or dried parsley.
  10. Place the pizza in the oven and bake for about 15-20 minutes until the cheese is bubbly and slightly browned.
  11. After baking, remove the pizza from the oven and let it rest for a few minutes. Cut into wedges and serve warm.
