Step-by-Step Instructions for Fritos Corn Salad
- In a large mixing bowl, combine two drained cans of whole kernel corn, finely diced red bell pepper, and two cups of shredded Mexican blend cheese. Gently fold the ingredients until evenly mixed.
- Add one cup of mayonnaise and a quarter teaspoon of black pepper to the mixture. Stir thoroughly until the mayo coats each ingredient.
- Right before serving, crush the bag of Chili Cheese Fritos into small pieces and fold into the salad mixture.
- If desired, chop the fresh cilantro and sprinkle over the top of the salad. Serve immediately.
