Step-by-Step Instructions
  1. Preheat oven to 350°F (175°C) and prepare an 8-inch round cake pan by lining with parchment paper and greasing sides.
  2. In a large mixing bowl, combine flour, baking powder, sugar, and salt. Whisk until well blended and free of lumps.
  3. Cut butter into small cubes and work it into the dry mixture until it resembles coarse crumbs.
  4. Make a well in the center, then pour in milk and vanilla. Stir gently until just combined.
  5. Pour the batter into the prepared pan and level it. Sprinkle demerara sugar on top if desired.
