  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar Balsamic vinegar can be used as a substitute
  • 2 tablespoons chopped green onion Adjust according to preference
  • 2 tablespoons chopped red onion White onion can be used if preferred
  • 1 teaspoon sea salt Adjust to taste
  • 1 teaspoon black pepper Use freshly ground for best flavor
  • ¼ cup fresh parsley Basil can be substituted
Optional Ingredients
  • 1 cup cucumber Diced, for added crunch
  • 1 cup feta cheese Crumble for creamy addition
  • 1 medium avocado Cubed, for creaminess and healthy fats

Method
 

Preparation
  1. Rinse the cherry or grape tomatoes under cool water, then slice them in halves or quarters. Arrange them in a large mixing bowl.
  2. Drizzle extra virgin olive oil and red wine vinegar over the sliced tomatoes. Add green onions and red onions, stirring gently to combine.
  3. If using optional ingredients, add cucumber, feta, and avocado now, folding gently into the salad mixture.
  4. Sprinkle sea salt and black pepper over the salad and toss to coat.
  5. Fold in chopped parsley for freshness. Serve immediately or chill for 30 minutes before serving.
