For the Cookie Dough
  • 1 cup Butter can substitute with coconut oil for a dairy-free version
  • 1 cup Granulated Sugar brown sugar can be used for added depth of flavor
  • 1 large Egg can use a flax egg for an egg-free option
  • 1 teaspoon Vanilla Extract can replace with almond extract
  • 2 cups All-Purpose Flour substitute with a 1:1 gluten-free flour blend for gluten-free
  • 1 teaspoon Baking Powder ensure it is fresh
  • 1 teaspoon Baking Soda can't be substituted directly
  • 2 tablespoons Matcha Powder higher quality ceremonial matcha is preferred
  • ½ teaspoon Salt
For the Cream Topping
  • 1 cup Mascarpone can substitute with cream cheese
  • ½ cup Confectioners Sugar regular sugar can be used
  • 2 tablespoons Agave or Honey maple syrup is a good alternative
  • ½ cup Heavy Cream for a lighter version, use half-and-half

Method
 

Step‑by‑Step Instructions
  1. Melt the butter in a medium saucepan over low heat, then let it cool slightly. Blend the cooled butter with granulated sugar until well combined. Add the egg and vanilla extract, stirring until smooth.
  2. Using a cookie scoop, portion out the dough and roll into uniform balls, about two inches in diameter. Transfer onto a parchment-lined baking sheet, flattening each slightly. Cover with plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat your oven to 180ºC (355ºF). Prepare another baking sheet with fresh parchment paper for baking.
  4. Once the oven is heated, bake the cookies for 10-11 minutes, until the edges are set and the centers remain soft. Let them cool on the sheet for 3 minutes, then transfer to a wire rack.
  5. Combine mascarpone, confectioners’ sugar, agave (or honey), and a pinch of matcha powder. Whip the mixture until stiff peaks form, about 3-5 minutes.
  6. Once cookies have cooled, apply the mascarpone cream atop each cookie using a piping bag or dollop spoon. Lightly dust with additional matcha powder for presentation.
