- Peel 4 ripe bananas and mash in a medium bowl. Drizzle with lemon juice and set aside.
- In a skillet, heat 1 cup of water and whisk in 1 cup of granulated sugar and ½ cup of brown sugar until dissolved. Bring to a gentle boil.
- Stir in the mashed bananas, 1 teaspoon of vanilla extract, optional cinnamon, and ½ cup of rum. Mix thoroughly.
- Reduce heat to low and simmer for about 30 minutes, stirring occasionally until thickened.
- Transfer the mixture to sterilized mason jars while warm. Cool to room temperature.
