Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or cooking spray.
  2. In a large mixing bowl, combine the grated carrots, brown sugar, and granulated sugar. Whisk in the eggs until fluffy.
  3. In a separate bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt until no lumps remain.
  4. Fold the dry ingredients into the wet mixture gently, leaving a few flour streaks.
  5. Pour the batter into the greased loaf pan and smooth the top with a spatula.
  6. Bake for 55-65 minutes and check for doneness with a toothpick, which should come out clean.
  7. Let the cake cool in the pan for about 10 minutes, then transfer to a wire rack.
  8. Shape marzipan into carrot decorations as the cake cools.
  9. Once cooled, frost the cake or dust with powdered sugar and decorate with marzipan carrots.
