- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the French vanilla cake mix, eggs, and softened butter. Blend on medium speed until smooth and well combined.
- Scoop tablespoon-sized amounts of dough onto the baking sheet, spacing them 2 inches apart. Bake for 10–12 minutes until edges are slightly golden.
- Remove the baking sheet from the oven and allow the cookies to cool completely on a wire rack.
- In a medium bowl, combine the softened butter and vanilla frosting. Beat until light and fluffy.
- Spread frosting onto the flat side of one cookie, and press another cookie on top to make a sandwich.
- Roll the edges of each filled pie in pastel sprinkles for decoration.
