  • 2 large Eggs A flax egg works well for a vegan option.
  • ½ cup Butter (softened) Coconut oil or margarine are great dairy-free alternatives.
For the Frosting
  • 1 container Vanilla Frosting Consider using cream cheese frosting for a delightful twist.
For Decoration
  • 1 cup Pastel Sprinkles Feel free to switch to other themed sprinkles.

Equipment

  • Mixing Bowl
  • Hand mixer
  • Baking Sheet
  • Parchment paper

Method

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the French vanilla cake mix, eggs, and softened butter. Blend on medium speed until smooth and well combined.
  3. Scoop tablespoon-sized amounts of dough onto the baking sheet, spacing them 2 inches apart. Bake for 10–12 minutes until edges are slightly golden.
  4. Remove the baking sheet from the oven and allow the cookies to cool completely on a wire rack.
  5. In a medium bowl, combine the softened butter and vanilla frosting. Beat until light and fluffy.
  6. Spread frosting onto the flat side of one cookie, and press another cookie on top to make a sandwich.
  7. Roll the edges of each filled pie in pastel sprinkles for decoration.
  8. Serve the Whoopie Pies slightly chilled or at room temperature.
