- Slice the English cucumbers thinly, about ¼ inch thick, and sprinkle with salt. Place in a colander to drain for 10 minutes.
- In a mixing bowl, combine Greek yogurt, crumbled feta, and chopped fresh herbs. Mash with a fork until smooth and creamy.
- Spread the creamy yogurt-feta mixture over 4 slices of whole-grain bread and layer drained cucumber slices evenly on two slices.
- Place the other slices on top, spread side down, and then cut each sandwich diagonally into quarters before serving.
