  1. Wash the strawberries thoroughly under cold water, remove the green tops, and slice them into halves or quarters.
  2. In a food processor, blend the prepared strawberries and honey for about 30 seconds or until you achieve a smooth purée. Reserve ¼ cup of the purée for later.
  3. Combine the plain Greek yogurt with the reserved strawberry purée in a mixing bowl and stir gently until well-blended.
  4. Fill a piping bag or a zip-top bag with the yogurt mixture and pipe 1-inch dollops on a parchment-lined sheet pan.
  5. Place the sheet pan into the freezer and allow the bites to freeze for approximately 1 hour.
  6. Once frozen, remove the bites from the freezer and serve them directly for a refreshing treat.
