Step-by-Step Instructions
  1. In a large skillet over medium-high heat, add one pound of ground beef. Use a spatula to break it apart as it cooks for about 7-10 minutes until browned and no longer pink. Drain excess grease.
  2. Stir in taco seasoning and ¼ cup of water into the browned beef. Mix thoroughly, and let it simmer for about 5 minutes until sauce thickens slightly.
  3. While beef simmers, prepare cilantro lime rice according to package instructions, or make it homemade. Cook rice for around 15-20 minutes.
  4. On a large plate or in a deep bowl, spoon a generous layer of the cilantro lime rice to create a base for your taco bowl.
  5. Spoon the seasoned ground beef mixture right in the center of your rice base, creating a colorful centerpiece.
  6. Generously top your taco bowl with canned corn, black beans, and shredded cheddar cheese. Add diced tomatoes and jalapeño slices.
  7. To finish, add a dollop of sour cream and sprinkle fresh cilantro. Squeeze lime juice over the top.
