Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x9 baking dish with coconut oil.
  2. Peel and slice the sweet potato into ¼-inch rounds and layer them in the baking dish.
  3. In a skillet, melt coconut oil and cook ground turkey until browned, then layer it over the sweet potatoes.
  4. Whisk together the eggs, paprika, garlic powder, and a pinch of salt and pepper, and pour it over the layers.
  5. Bake in the preheated oven for 30 minutes until the casserole is puffed and set around the edges.
  6. Add a layer of baby spinach on top and return to the oven for an additional 10-15 minutes.
