Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your mini cheesecake pan or muffin tin placed on a sturdy baking sheet.
  2. Melt the butter in a small bowl, then crush the OREO cookies into fine crumbs. Combine them with the melted butter and press into the mini cheesecake pan.
  3. Beat the cream cheese, sugar, eggs, and vanilla with an electric mixer until smooth. Gradually add the flour, then stir in green food coloring.
  4. Pour the cheesecake batter over the crusts in the mini cheesecake pan, filling each cup nearly to the top. Bake for approximately 15 minutes.
  5. Once cooled, dip the tops of each cheesecake into melted chocolate and coat with chocolate sprinkles. Use melted chocolate to pipe decorations and attach edible eyes and chocolate chips.
