Salad
  • 4 ounces Thin Rice Noodles Pad Thai noodles can be an alternative.
  • 1 cup Cucumber Any variety or substitute with zucchini.
  • 1 cup Purple Cabbage Cole slaw mix can be used.
  • 1 medium Carrot Grated or julienned is best.
  • 1 medium Red Pepper Can substitute with yellow or orange peppers.
  • ¼ cup Cilantro Optional, can substitute with parsley.
  • ¼ cup Mint Basil can be used as a substitute.
Garnish
  • ¼ cup Peanuts Optional for garnish; can replace with cashews.

Cooking Instructions
  1. Cook the Noodles: Boil water in a large pot. Add thin rice noodles and cook according to package instructions (about 4-6 minutes). Drain and rinse under cold water, then cut into shorter strands.
  2. Make the Dressing: In a small mixing bowl, combine creamy peanut butter, hoisin sauce, lime juice, soy sauce, and water. Whisk until smooth and creamy, adjusting with more water as needed.
  3. Combine Ingredients: In a large serving bowl, toss cooled noodles, cucumber, purple cabbage, carrot, red pepper, cilantro, and mint. Drizzle with peanut sauce and mix gently.
  4. Garnish and Serve: Sprinkle chopped peanuts on top. Serve immediately or chill for 30 minutes to meld flavors.
