Method
 

Step-by-Step Instructions for Garlic Ginger Soba Noodle Stir Fry
  1. Wash and cut your mixed vegetables into uniform pieces. Trim the chicken and slice into bite-sized cubes.
  2. In a small bowl, whisk together minced garlic, grated ginger, lite soy sauce, rice vinegar, and honey until well combined.
  3. Heat sesame oil in a large skillet over medium-high heat. Add mixed vegetables and sauté for 4-5 minutes.
  4. Add cubed chicken to the skillet and sauté for 5-10 minutes, or until fully cooked.
  5. Pour in the garlic ginger sauce, mixing well to coat. Cook for an additional 5 minutes.
  6. Boil water in a separate pot. Cook soba noodles according to package instructions, about 4 minutes.
  7. Drain noodles and rinse under cold water. Add to the skillet and toss to combine.
  8. Serve the stir fry warm, optionally garnished with sesame seeds and chopped chives.
