Ingredients

  • 3 cups all-purpose flour or gluten-free flour
  • 1 tablespoon baking soda
  • 1 teaspoon salt using sea salt adds gourmet flair
  • 2 teaspoons ground ginger
  • 1 tablespoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 1 cup unsalted butter or salted butter
  • 1 cup brown sugar can substitute with coconut sugar
  • 3 large eggs room temperature
  • 1 cup molasses
  • 1 teaspoon vanilla extract
For the Frosting
  • 1 cup unsalted butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3-4 tablespoons heavy cream adjust for consistency

Method
 

Cake Preparation
  1. Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans with butter or cooking spray. Line the bottoms with parchment paper.
  2. In a large mixing bowl, whisk together all-purpose flour, baking soda, salt, ground ginger, ground cinnamon, and ground nutmeg.
  3. In another bowl, cream together unsalted butter and brown sugar until light and fluffy. Add eggs one at a time, mixing well after each.
  4. Stir in molasses and vanilla extract. Gradually add the dry ingredients, mixing until just combined.
  5. Divide the batter evenly among the prepared cake pans and bake for 25-30 minutes.
  6. Prepare the frosting by beating together unsalted butter and powdered sugar until smooth. Mix in vanilla and cream.
  7. Once the cake layers are cool, assemble by frosting between layers and on top.
  8. Refrigerate the assembled cake for at least 30 minutes to set the frosting.
