- Preheat your oven to 325°F (163°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together 1 cup of room temperature unsalted butter and 1 cup of granulated sugar until light and fluffy.
- Add in one large egg, one egg yolk, 2 tablespoons of fresh grapefruit juice, and 1 tablespoon of grapefruit zest. Mix until combined.
- In a separate bowl, whisk together 2 cups of flour, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt.
- Gradually add the dry mixture to the wet mixture, mixing until just combined.
