Method
 

Preparation Steps
  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, cumin, salt, and pepper to create the marinade.
  2. Cut the beef into 1-inch cubes and coat with marinade. Cover with plastic wrap and refrigerate for at least 30 minutes, ideally 2-3 hours.
  3. Preheat your grill to medium-high heat about 10 minutes before grilling.
  4. Thread the marinated beef cubes onto soaked skewers, aiming for 4-5 pieces each.
  5. Grill the skewers for 3-4 minutes on each side until charred and medium-rare (about 130°F total cooking time is 8 minutes).
  6. Remove from grill, let rest for a couple of minutes, and serve with pita, tzatziki, and Greek salad.
