For the Bowls
  • 2 cups Cooked Rice (or Cauliflower Rice) hearty base

  • ½ cup Kalamata Olives optional
  • ½ cup Feta Cheese can substitute with goat cheese or nutritional yeast
  • ¼ cup Fresh Parsley for garnish

Method
 

Preparation Steps
  1. In a medium bowl, whisk together olive oil, minced garlic, lemon juice, red wine vinegar, dried oregano, ground cumin, salt, and pepper.
  2. Place the chicken thighs in a resealable bag or shallow dish, pour the prepared marinade over the chicken, and refrigerate for 30 minutes to 4 hours.
  3. Preheat your grill or skillet to medium-high heat. Cook the chicken for 5-7 minutes on each side or until it reaches an internal temperature of 165°F (75°C).
  4. Transfer the chicken onto a cutting board and let it rest for about 5 minutes. Slice into thin strips.
  5. Layer a hearty base of cooked rice or cauliflower rice in each bowl, then arrange the sliced chicken on top.
  6. Add halved cherry tomatoes, diced cucumbers, thinly sliced red onion, Kalamata olives, and crumbled feta cheese.
  7. Drizzle tzatziki sauce over the toppings and sprinkle fresh parsley on top.
