  • 2 tablespoons Olive Oil extra virgin for best flavor
For the Pasta
  • 1 cup Dry Orzo Pasta can be substituted with quinoa for gluten-free
For the Vegetables
  • 1 medium English Cucumber remove seeds if using regular cucumbers
  • 1 cup Cherry Tomatoes grape tomatoes can be substituted
  • 1 small Onion red onion provides milder taste
For the Tzatziki
  • 1 cup Greek Yogurt any plain yogurt works
  • 1 tablespoon Dill can substitute with fresh mint
  • 2 tablespoons Lemon Juice adjust for desired acidity
  • 1 teaspoon Garlic Powder fresh garlic could also be used
  • to taste Salt & Pepper
For the Seasoning
  • 1 teaspoon Oregano
  • 1 teaspoon Marjoram
  • 1 teaspoon Greek Seasoning
  • 1 teaspoon Basil
For Garnish
  • ½ cup Feta Cheese crumbled
  • to taste Sriracha optional

Method
 

Step-by-Step Instructions
  1. Fillet Chicken: Slice the chicken breasts into thin cutlets, aiming for uniform thickness.
  2. Marinate Chicken: Combine olive oil, lemon juice, oregano, marjoram, garlic powder, salt, and pepper. Add chicken cutlets, seal and shake to coat, then let marinate for 15-20 minutes.
  3. Prepare Tzatziki: Mix Greek yogurt, grated cucumber, minced garlic (or powder), lemon juice, dill, salt, and pepper. Chill for 20 minutes.
  4. Cook Orzo: Boil salted water and cook dry orzo according to package directions (8-10 minutes), then drain and rinse.
  5. Sauté Chicken: Heat olive oil in a skillet, sauté chicken for 6-7 minutes per side until golden and cooked through, then let rest before slicing.
  6. Chop Veggies: Dice cucumber, halved cherry tomatoes, and onion into bite-sized pieces.
  7. Assemble Bowls: Layer cooked orzo, sliced chicken, diced veggies, tzatziki, and sprinkle feta before serving.
