For the Potatoes
  • 2 pounds Baby Potatoes Small, uniform potatoes for best results
  • ¼ cup Olive Oil Extra virgin recommended
  • 2 teaspoons Dried Oregano
  • 1 teaspoon Garlic Powder
  • to taste Salt
  • to taste Pepper
For Toppings
  • 1 cup Feta Cheese Crumbled, or plant-based for dairy-free
  • 1 medium Lemon Juice and zest
  • ¼ cup Fresh Parsley Finely chopped

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Rinse the baby potatoes under cold water and halve them.
  3. Drizzle olive oil over the potatoes and coat them well.
  4. Sprinkle oregano, garlic powder, salt, and pepper over the potatoes and toss.
  5. Arrange the potatoes in a single layer on a baking sheet.
  6. Roast for about 25 minutes, turning halfway through.
  7. Crumble feta cheese over the potatoes and return to the oven.
  8. Roast for an additional 10-15 minutes until feta is golden.
  9. Drizzle with lemon juice and garnish with parsley.
