Preparation
- Preheat your oven to 400°F (200°C).
- Rinse the baby potatoes under cold water and halve them.
- Drizzle olive oil over the potatoes and coat them well.
- Sprinkle oregano, garlic powder, salt, and pepper over the potatoes and toss.
- Arrange the potatoes in a single layer on a baking sheet.
- Roast for about 25 minutes, turning halfway through.
- Crumble feta cheese over the potatoes and return to the oven.
- Roast for an additional 10-15 minutes until feta is golden.
- Drizzle with lemon juice and garnish with parsley.
