- Soak 16 wooden skewers in water for at least 1 hour.
- In a large mixing bowl, combine sweet chili sauce, mayonnaise, garlic powder, chili powder, onion powder, paprika, salt, and pepper. Mix well.
- Trim fat from chicken thighs and cut into cubes. Add to marinade and cover. Marinate for at least 1 hour, or overnight.
- Preheat the grill to high heat (400-450°F).
- Thread the marinated chicken onto the soaked skewers.
- Grill the skewers for about 10 minutes on each side, avoiding movement until a char is achieved.
- In the last 5 minutes of grilling, brush reserved marinade onto the skewers.
- Remove from grill and let skewers rest before serving warm.
