Method
 

Step-by-Step Instructions
  1. Soak 16 wooden skewers in water for at least 1 hour.
  2. In a large mixing bowl, combine sweet chili sauce, mayonnaise, garlic powder, chili powder, onion powder, paprika, salt, and pepper. Mix well.
  3. Trim fat from chicken thighs and cut into cubes. Add to marinade and cover. Marinate for at least 1 hour, or overnight.
  4. Preheat the grill to high heat (400-450°F).
  5. Thread the marinated chicken onto the soaked skewers.
  6. Grill the skewers for about 10 minutes on each side, avoiding movement until a char is achieved.
  7. In the last 5 minutes of grilling, brush reserved marinade onto the skewers.
  8. Remove from grill and let skewers rest before serving warm.
