For the Vegetables
  • 1 medium Zucchini Can use bell peppers or mushrooms
  • 1 medium Yellow Pepper Any colored bell pepper works well
  • 1 medium Red Onion Substitute with yellow onion or shallots
  • 1 cup Cherry Tomatoes Grape tomatoes can be used as an alternative

Method
 

Step-by-Step Instructions
  1. In a large bowl or ziplock bag, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper. Add cubed chicken and toss to coat. Marinate for at least 30 minutes.
  2. Preheat your grill to medium-high heat (375°F to 450°F). Lightly oil the grill grates to prevent sticking.
  3. Slice the zucchini, yellow pepper, and red onion into even pieces, rinse the cherry tomatoes, and set aside.
  4. Thread the marinated chicken and vegetables onto skewers, alternating between chicken and veggies.
  5. Place skewers on the grill and cook for about 5-6 minutes on each side until the chicken reaches an internal temperature of 165°F.
  6. Remove from grill, let rest for a few minutes, and serve warm with your favorite sides.
