Method
 

Preparation
  1. In a medium bowl, whisk together olive oil, lime juice, minced garlic, chili powder, smoked paprika, salt, and pepper. Add shrimp and marinate for 15 minutes.
  2. In another bowl, combine avocado, corn, red onion, jalapeño, cilantro, lime juice, salt, and pepper. Toss gently and set aside.
  3. In a small bowl, whisk mayonnaise, sour cream, lime juice, and hot sauce. Adjust seasoning as needed.
Cooking
  1. Preheat grill to medium-high heat. Thread shrimp onto skewers and grill for 2-3 minutes per side until pink and opaque.
  2. Remove shrimp from grill and let rest.
