Step-by-Step Instructions
  1. Preheat your grill to medium-high heat, around 400°F, for about 10 minutes.
  2. In a small bowl, mix together chili powder, garlic powder, cinnamon, cumin, and salt. Rub this mixture on the skirt steak and let it sit for 5 minutes.
  3. Grill the seasoned skirt steak for 3-5 minutes on each side until crusty and medium-rare.
  4. While the steak rests, grill an ear of corn for 10-12 minutes, rotating every 2-3 minutes.
  5. Dice the cooled corn and cucumber, and combine with jalapeño, red onion, lime juice, and salt in a bowl.
  6. Slice the rested steak thinly against the grain.
  7. Warm corn tortillas on the grill, then fill with sliced steak and top with salsa, avocado, and cilantro.
