Preparation Steps
  1. Wash and chop vegetables excluding cherry tomatoes. Cut bell peppers into 1-inch pieces, zucchini into half-moons, and slice the mushrooms. Chop red onion into similar-sized pieces.
  2. In a separate bowl, whisk together marinade ingredients until smooth and well-blended.
  3. Pour marinade over chopped vegetables and toss until coated. Allow to marinate for 10 minutes.
  4. Preheat grill to high heat (400-450°F) and warm up a grill basket for 5 minutes.
  5. Add marinated vegetables (exclude cherry tomatoes) to the grill basket and cook for 10-13 minutes, stirring occasionally.
  6. After initial grilling, add cherry tomatoes and cook for an additional 5-7 minutes until all vegetables are tender.
  7. Transfer the grilled vegetables to a serving bowl and enjoy warm.
