  • 1 cup Feta Cheese Crumble over the salad
  • 1 cup Blueberries Feel free to swap in seasonal berries like strawberries
  • 2 tablespoons Orange Juice Provides bright acidity
  • 1 tablespoon Lime Juice Adjust based on your taste
  • ¼ cup Mint Leaves For garnish; can use basil or cilantro

Method
 

Grilling Instructions
  1. Preheat the grill or griddle pan over high heat at around 400°F for 5-10 minutes.
  2. Slice the seedless watermelon into half-inch thick wedges, removing the rind. Brush with olive oil.
  3. Grill the watermelon wedges for 2-3 minutes on each side until char marks form.
  4. Arrange the grilled watermelon on a plate, crumble feta on top, and scatter blueberries.
  5. Whisk together remaining olive oil, lime juice, orange juice, and a pinch of salt for dressing.
  6. Drizzle the dressing over the salad and garnish with mint leaves. Serve immediately.
