Ingredients
  

For the Pasta
  • 12 oz Rotini Pasta Substitute with whole wheat or gluten-free variety if desired.
For the Meat
  • 8 oz Oven Roasted Turkey Can be replaced with chicken for variation.
  • 4 oz Pepperoni Ham or chorizo are great alternatives.
  • 4 oz Salami Other cured meats may be swapped.
For the Cheese
  • 4 oz Provolone Cheese Substitutes include mozzarella or Gouda.

For the Vegetables
  • 2 cups Iceberg Lettuce Can be replaced with romaine or mixed greens.

For the Dressing

  • 2 tablespoon Pepperoncini Juice Pickled jalapeño juice can add spiciness.
  • 1 teaspoon Dried Oregano Italian seasoning may also be used.
  • 1 clove Garlic (Grated) Fresh minced garlic is a good alternative.

Method
 

Directions
  1. In a medium bowl, whisk together mayonnaise, red wine vinegar, pepperoncini juice, dried oregano, grated garlic, salt, and black pepper until smooth and creamy. Cover and refrigerate for at least 30 minutes.
  2. Bring a large pot of salted water to a rolling boil. Add the rotini pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Drain and rinse under cold water.
  3. While pasta is cooling, chop the oven-roasted turkey, pepperoni, and salami into bite-sized pieces. Dice the cheeses and slice the vegetables uniformly.
  4. In a large mixing bowl, add the cooled pasta along with the chopped meats, cheeses, and vegetables. Gently toss together.
  5. Pour the chilled dressing over the salad, tossing gently to coat all ingredients evenly.
  6. Cover and refrigerate for at least 2 hours. Toss before serving.
