For the Stew
  • 2 pounds Lamb Shoulder can be swapped with beef
  • 2 tablespoons Vegetable Oil olive oil is a great substitute
  • to taste Salt essential for seasoning
  • to taste Pepper essential for seasoning
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 medium Carrots sliced
  • 2 pounds Potatoes Yukon Gold or red potatoes
  • 4 cups Beef or Lamb Broth vegetable broth can be used
  • 1 tablespoon Tomato Paste
  • 1 cup Guinness Stout optional
  • 2 leaves Bay Leaves remove before serving
  • 1 tablespoon Thyme fresh or dried
  • 1 tablespoon Parsley fresh or dried
For the Mashed Potatoes
  • 2 pounds Potatoes for Mashing can swap with cauliflower
  • ½ cup Milk can use plant-based alternative
  • 4 tablespoons Butter or a dairy-free spread

Method
 

Cooking the Stew
  1. Brown the lamb in vegetable oil, seasoning with salt and pepper.
  2. Sauté diced onion and minced garlic until translucent.
  3. Combine browned lamb with sliced carrots and diced potatoes.
  4. Add broth, tomato paste, optional stout, thyme, parsley, and bay leaves.
  5. Simmer for 1.5 to 2 hours until lamb is fork-tender.
Preparing Mashed Potatoes
  1. Boil peeled and cubed potatoes until fork-tender.
  2. Mash potatoes with butter and milk until creamy.
  3. Season with salt and pepper to taste.
Serving
  1. Serve the hot Irish stew topped with creamy mashed potatoes.
  2. Garnish with freshly chopped parsley before serving.
