Step‑by‑Step Instructions for Easy Paleo Slow Cooker Beef Stew
  1. Begin by prepping all your ingredients. Chop the baby blonde potatoes, carrots, and yellow onion into uniform pieces for even cooking. Cube the beef stew meat into bite-sized chunks, trimming any excess fat. Mince the garlic, ensuring it’s fresh for the best flavor.
  2. Once your ingredients are prepped, add the beef stew meat, chopped potatoes, carrots, onion, minced garlic, tomato paste, coconut aminos, salt, and pepper into your slow cooker. Pour in 2.5 to 3 cups of beef broth, ensuring all ingredients are well submerged. Stir gently to combine everything.
  3. Cover the slow cooker with its lid and set it to cook on low for 6 to 7 hours, or on high for 3 to 4 hours.
  4. In the final 30 minutes of cooking, add in a cup of frozen peas. If you’d like a thicker texture, dissolve 2 tablespoons of arrowroot flour in a bit of water and stir it into the slow cooker.
  5. After the cooking time is complete, carefully taste the stew and adjust the seasoning with additional salt and pepper as needed. Ladle into bowls, garnishing with fresh parsley if desired.
