Step-by-Step Instructions
  1. Preheat your oven to 220°C (425°F) for perfect roasting.
  2. Wash and halve the baby potatoes, then toss with olive oil, garlic powder, smoked paprika, salt, and pepper.
  3. Arrange the seasoned potatoes cut-side down on a baking sheet.
  4. Roast the potatoes for 30 to 35 minutes, flipping halfway through.
  5. Whisk together the dressing ingredients in a small bowl.
  6. Combine the warm roasted potatoes with the dressing in a large bowl.
  7. Add fresh parsley, dill, and chives to the potatoes and toss gently.
