  • 4 oz Feta crumbled
  • cup Olive oil for marinating and roasting
  • 1 medium Lemon freshly squeezed
  • 4 cloves Garlic minced
  • ¼ cup Parsley finely chopped
  • 2 tablespoon Dill finely chopped
  • 2 tablespoon Oregano finely chopped
  • 2 tablespoon Rosemary finely chopped
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 1 teaspoon Sumac optional
For the Vegetables and Chicken
  • 1 lb Baby potatoes chopped in ½" cubes
  • 2 medium Bell peppers thinly sliced or chopped
  • 1 cup Cherry tomatoes halved
  • 1 medium Red onion thinly sliced
  • 4 pieces Boneless, skinless chicken breast
  • 1 medium Lemon sliced in 3 thick rounds

Method
 

Preparation Steps
  1. Whisk together olive oil, feta, minced garlic, lemon juice, parsley, dill, oregano, and rosemary in a measuring cup. Set aside.
  2. Preheat your oven to 425°F (220°C).
  3. On a rimmed baking sheet, spread baby potatoes, bell peppers, cherry tomatoes, and red onion. Drizzle with olive oil and season with salt and black pepper, then toss to coat.
  4. Place chicken breasts among vegetables and pour the marinade over them. Nestle lemon rounds around the chicken.
  5. Bake in the preheated oven for 35-40 minutes until chicken reaches 165°F and vegetables are golden brown.
  6. After baking, squeeze warm lemon wedges over the dish, garnish with fresh herbs, and serve.
