  • 1 large yellow onion substitute white, red onion or shallots
  • 3 cloves garlic fresh preferred, garlic powder as substitute
  • 3 cups chicken broth substitute vegetable or beef broth
For the Protein
  • 2 pounds chicken breasts cut into bite-sized pieces, substitute thighs or plant-based proteins
  • 1 can black beans substitute pinto or kidney beans
For the Extras
  • 1 cup corn use fresh or frozen if canned is unavailable
  • 1 cup salsa substitute diced tomatoes with green chilies
For Seasoning
  • 2 tablespoons chili powder substitute with chipotle powder or cayenne
  • 1 tablespoon paprika substitute with smoked paprika or cayenne
  • 1 teaspoon black pepper
For the Topping
  • 2 cups shredded cheddar cheese substitute Monterey Jack or dairy-free option

Method
 

Preparation
  1. Preheat your oven to 360°F (182°C) and grease a 9x13 casserole dish.
  2. Layer the bottom with basmati rice, followed by chopped yellow onion and minced garlic.
  3. Pour chicken broth over the layered rice and veggies and stir gently.
  4. Distribute diced chicken breasts evenly, then layer with black beans and corn.
  5. In a small dish, mix salsa, paprika, chili powder, and black pepper, then pour over the layers.
  6. Spread the mixture evenly and sprinkle shredded cheddar cheese on top.
  7. Cover the dish with aluminum foil and bake for 45 minutes, then uncover and bake for an additional 10 minutes.
  8. Let the casserole rest for a few minutes before serving.
