  1. Preheat your oven to 350°F (175°C). Grease a 9-inch baking pan with butter or cooking spray, then line the bottom with parchment paper.
  2. Peel, core, and thinly slice your apples. If desired, toss with lemon juice.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, ground cinnamon, and optional cardamom.
  4. In a separate large bowl, combine melted butter, sugar, eggs, vanilla extract, and yogurt. Whisk until smooth.
