Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a double boiler, combine heavy cream, espresso powder, chocolate chips, and vanilla extract. Stir until fully melted and smooth, about 5-7 minutes.
  3. Pour the chocolate mixture into the prepared baking dish.
  4. In a large mixing bowl, whisk together flour, crushed graham crackers, sugar, baking powder, salt, and cinnamon until combined.
  5. Cut cold butter into the dry mix until resembling coarse crumbs, about 2-3 minutes.
  6. Stir in vanilla extract and buttermilk until just combined.
  7. Spoon the cobbler topping over the chocolate layer, leaving gaps.
  8. Tuck half of the marshmallows into the topping. Bake for 35-40 minutes.
  9. Sprinkle remaining marshmallows on top and bake for an additional 2-3 minutes.
  10. Let the cobbler rest for 10 minutes before serving.
