Step-by-Step Instructions
  1. Chill Your Tools: Place a large metal mixing bowl and a whisk into the freezer for about 10 minutes.
  2. Prepare the Strawberries: In a medium bowl, combine freshly washed and hulled strawberries with sugar and sea salt. Toss gently and set aside to macerate for 10 minutes.
  3. Whip the Cream: Retrieve the chilled bowl and whisk, pour in the heavy cream and crème fraîche, then whisk vigorously for 4 to 6 minutes until medium peaks form.
  4. Assemble the Dessert: Spoon macerated strawberries into bowls and dollop whipped cream mixture on top.
  5. Add the Finishing Touch: Crush shortbread or sablés and sprinkle over the whipped cream, then add flaky sea salt. Serve immediately.
