Ingredients
  

Biscuit Base
  • 2 cups All-Purpose Flour
  • ¼ cup Brown Sugar (packed)
  • 1 tablespoon Baking Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • ½ cup Frozen Butter (grated)
  • ¾ cup Buttermilk
  • 6 oz Blackberries approx.
Lemon Glaze
  • 2 tablespoon Melted Butter
  • 1 cup Confectioner’s Sugar
  • 1 teaspoon Lemon Zest
  • 1 tablespoon Lemon Juice

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.
  2. In a large mixing bowl, whisk together the all-purpose flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon.
  3. Grate the frozen butter into the mixture and toss until it resembles coarse crumbs.
  4. Gradually pour in the buttermilk, mixing gently until a soft dough forms.
  5. Turn the dough out onto a floured surface, fold it in half twice, and press it down into a rectangle.
  6. Sprinkle one-third of the blackberries over the dough, fold it over gently, and pat it down.
  7. Cut out biscuits using a biscuit cutter and place them close together in the baking dish.
  8. Bake for 20 to 25 minutes until golden brown.
  9. While baking, prepare the lemon glaze by whisking together melted butter, confectioner’s sugar, lemon juice, and lemon zest.
  10. Brush the warm biscuits with the lemon glaze once removed from oven.
