Method
 

Cooking Instructions
  1. Fill a large pot with water and bring it to a rolling boil. Add fresh noodles, cooking according to package instructions (3-5 minutes). Drain and set aside.
  2. In a large skillet, heat vegetable oil over medium heat. Add ground pork and cook for 5-7 minutes until browned. Remove from heat.
  3. Return the skillet to heat and add minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
  4. Mix in soy sauce, sesame paste, chili oil, and rice vinegar. Stir until combined into a creamy sauce and simmer for 2 minutes.
  5. Add drained noodles into the skillet with the meat and sauce. Toss for about 2 minutes until noodles are well coated.
  6. Sprinkle in Sichuan peppercorns gradually, mixing well to adjust the spice level.
  7. Plate the noodles and garnish with green onions, fresh vegetables, and chopped peanuts.
