- Fill a large pot with water and bring it to a rolling boil. Add fresh noodles, cooking according to package instructions (3-5 minutes). Drain and set aside.
- In a large skillet, heat vegetable oil over medium heat. Add ground pork and cook for 5-7 minutes until browned. Remove from heat.
- Return the skillet to heat and add minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.
- Mix in soy sauce, sesame paste, chili oil, and rice vinegar. Stir until combined into a creamy sauce and simmer for 2 minutes.
- Add drained noodles into the skillet with the meat and sauce. Toss for about 2 minutes until noodles are well coated.
- Sprinkle in Sichuan peppercorns gradually, mixing well to adjust the spice level.
- Plate the noodles and garnish with green onions, fresh vegetables, and chopped peanuts.
