- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and slice the fresh strawberries, setting them aside in a bowl.
- Roll out the refrigerated pie dough on a lightly floured surface until it's about ⅛ inch thick. Cut into four circles, each approximately 6 to 7 inches in diameter.
- Place a quarter of the sliced strawberries in the center of each dough circle, leaving a 1-inch border around the edges.
- Gently fold the edges of the dough over the strawberry filling, pleating as you go. Brush with milk or cream and sprinkle sugar on top.
- Transfer the assembled galettes to the prepared baking sheet and bake for about 25 to 30 minutes.
- Once baked, brush a thin layer of strawberry jam over the warm filling.
