Step‑by‑Step Instructions
  1. Preheat your oven to 325°F (163°C). Gather all your ingredients and equipment, including a mixing bowl, food processor, and a loaf pan.
  2. In a food processor, combine the garlic-flavored croutons, ground black pepper, cayenne pepper, chili powder, and dried thyme. Pulse until it reaches a fine breadcrumb consistency.
  3. Add the onion, carrot, garlic, and red bell pepper to the food processor. Pulse until the vegetables are finely chopped but not pureed.
  4. In the mixing bowl, combine the breadcrumb mixture with the processed vegetables, ground chuck, ground sirloin, kosher salt, and egg. Mix thoroughly.
  5. Transfer the meat mixture into a 10-inch loaf pan, shaping it into a uniform loaf. Invert the pan onto a parchment-lined baking sheet.
  6. Insert a probe thermometer into the center of the meatloaf, setting it to an internal temperature of 155°F.
  7. Mix together the glaze ingredients: catsup, ground cumin, Worcestershire sauce, hot pepper sauce, and honey.
  8. After the meatloaf has been baking for about 10 minutes, brush the prepared glaze over the top.
