- Preheat your oven to 325°F (163°C). Gather all your ingredients and equipment, including a mixing bowl, food processor, and a loaf pan.
- In a food processor, combine the garlic-flavored croutons, ground black pepper, cayenne pepper, chili powder, and dried thyme. Pulse until it reaches a fine breadcrumb consistency.
- Add the onion, carrot, garlic, and red bell pepper to the food processor. Pulse until the vegetables are finely chopped but not pureed.
- In the mixing bowl, combine the breadcrumb mixture with the processed vegetables, ground chuck, ground sirloin, kosher salt, and egg. Mix thoroughly.
- Transfer the meat mixture into a 10-inch loaf pan, shaping it into a uniform loaf. Invert the pan onto a parchment-lined baking sheet.
- Insert a probe thermometer into the center of the meatloaf, setting it to an internal temperature of 155°F.
- Mix together the glaze ingredients: catsup, ground cumin, Worcestershire sauce, hot pepper sauce, and honey.
