Ingredients

  • 7-8 cups Ciabatta Bread, cubed Stale ciabatta absorbs the custard well.
  • 2 tablespoons Olive Oil Melted butter can be used for a sweeter touch.
For the Custard
  • ½ tablespoon Dry Rosemary Fresh rosemary can substitute; use less.
  • 2 cups Parmesan Cheese, shredded Pecorino Romano can be used for a sharper flavor.
  • 3 whole Eggs Bind the pudding together.
  • 2 cups Half & Half/Milk/Cream Dairy-free alternatives can be used.
  • pinch Salt
  • pinch White Pepper Black pepper can replace for a spicier kick.
  • pinch Onion Powder Sautéing fresh onions can add more flavor.

  • Cooked Sausage or Ham For a heartier meal.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. Toss the cubed ciabatta bread with olive oil and dry rosemary until well-coated. Spread on a baking sheet and bake for about 15 minutes until golden and dry.
  3. Whisk together the eggs, half & half (or milk), salt, white pepper, and onion powder in a separate bowl until smooth and creamy.
  4. Fold the dried bread into the egg mixture, adding 1 cup of shredded Parmesan cheese. Let it sit for 30 minutes.
  5. Preheat your oven to 350°F (177°C).
  6. Layer half of the bread mixture in a greased baking dish. Sprinkle ½ cup of Parmesan cheese over the top.
  7. Add the remaining bread mixture on top and finish with the remaining Parmesan cheese.
  8. Bake uncovered for about 35 minutes until golden and set in the center.

Notes
